This would be treated in a similar way to characters who require something specific every day in order to function. I can use my own character in the game as an example: Kieren is a zombie who requires a daily injection of a medication to stop him regressing into a feral, primal state. This is essentially 'frozen' by the Aurora — as said drug is technically fictional — so he can be playable as a character in a game with little resources.
Or, for another example, we had a character with a heart condition where his heart would give out ever twenty minutes and he would be brought back via an AED. Due to the lack of technology, this aspect was 'frozen' — but the character was still physically weak and experienced symptoms of poor health, which limited his travelling ability, or made him more prone to sickness.
In Kat's case, her disease can be frozen from progressing. She could still experience symptoms of her disease and you could play around with the limitations of how her disease might impact her. But certainly it wouldn't get any worse or cause her to die because of it due to lack of treatment.
